This is something that all Indian mothers would love to have. To make this dish, first boil 1 cup of soaked lentils in a pressure cooker with 5-7 whistles. Next, in a grinder add 4-5 garlic cloves and 1-2 inch ginger pieces with 4-5 green peppers. Grind all the ingredients until a paste is formed and once done, scrape aside. Next, add a red onion (chopped) to it. Start the grinder for a few seconds until the onion is finely textured. Now, place a kadhai or a large saucepan over medium heat and heat 5-6 tablespoons of sunflower oil in it. When the oil is hot enough, add the onion mixture and cook for 3-5 minutes, stirring in. When the onion is cooked, add 1 teaspoon coriander powder, 1 teaspoon cumin powder and 1/2 teaspoon turmeric and cook for 2 more minutes. Meanwhile, make 2-3 tomato purees in the same grinder (make sure you wash them with water) and add to the pan. Finally add some salt to taste and let the puree cook for 3-5 minutes, stirring occasionally. Now add cooked lentils to the puree and stir well. To finish the dish, sprinkle hot spices on top and cook over low heat for another 5 minutes with the lid on. When done, turn off the heat and garnish with chopped coriander, serve with cumin rice and enjoy.
